A delicious and calorie-conscious version of an Italian favorite, Steak Pizzaiola. Preparation: 2 min Cooking: 5 min. You can easily halve this dish for two.
1 tablespoon olive or vegetable oil
4 minute steaks (about 4 ounces each)
1/4 teaspoon of salt
1/4 teaspoon of pepper
11/2 cups low-sodium crushed tomatoes
2 cloves garlic, minced
1/2 teaspoon dried oregano, crumbled
1. In a heavy 12-inch skillet, heat the olive oil over moderately high heat until very hot. Sprinkle the steaks with the salt and pepper and cook for 30 seconds on each side; transfer to a heated platter and keep warm.
2. Add the tomatoes, garlic, and oregano to the skillet, and cook, stirring, until thick – about 4 minutes. Spoon the sauce over the steaks.
